Coraline’s Gulf seafood menu is a collaboration from Beau Rivage Executive Chef Kristian Wade and Coraline’s Executive Chef Austin Dedeaux, both Mississippi Gulf Coast natives who have honed their culinary skills with more than three decades of combined experience in award-winning MGM Resorts and Coastal Mississippi restaurants. Biloxi’s prime location on the Gulf of Mexico allows the talented chefs to source an abundance of premier seafood, such as oysters, crab, shrimp, snapper and redfish, and creatively execute delicious dishes that please the palate.
Chef Wade, whose deep-rooted passion for coastal cuisine is inspired by family traditions, said, “Coraline’s pays homage to the Gulf of Mexico. Highlights of Coraline’s ingredient-driven menu include:
Oysters – Coraline’s oyster bar affords guests a front-row view of fresh oyster shucking and New Orleans’ style char-grilled preparation, as well as Oysters Rockefeller, Coraline’s signature 875 oysters, with blue crab, shrimp, mushrooms, white truffle sauce and scallions; and Lighthouse oysters topped with crawfish, andouille sausage, tomato and savory velouté sauce.
Cold Appetizers – A variety of cold selections include the West Indies Crab Salad, a Gulf Coast staple, made with marinated blue crab, sweet onion, and apple cider vinegar served with crispy flat bread. Tuna Poke Tostado features a fresh take on local tuna with cucumber, avocado, scallion and furikake, all combined and tossed in a zesty marinade of soy sauce, sesame oil and a hint of chili. Smoked Fish Dip mixes a creamy blend of hickory-smoked fish, cream cheese, spices, and cherry pepper relish served with Native American fry bread.
Hot Appetizers – The hot appetizer section highlights regional-inspired classics with a Beau Rivage twist, including Seafood Stuffed Fried Green Tomatoes, stuffed with crab, crawfish, andouille sausage, tomato and a savory cream sauce. Coraline’s Deviled Crab Dip, the popular menu staple from the location’s original restaurant, returns in tribute to its predecessor Memphis Q and features Swiss cheese fondue with blue crab, melted leeks, and sherry served with crispy flat bread. The delicious Crawfish Vol-Au-Vent made of crawfish etouffee with house-made tasso stuffed in a flaky puff pastry.
Soups – Soup options include Beau Rivage’s award-winning Seafood Gumbo, Oyster Bisque, and Turtle Soup, Coraline’s signature version of a New Orleans classic finished with sherry, spinach, lemon and boiled egg.
Salads – Comprised of romaine and iceberg lettuces, gulf shrimp, hearts of palm, roasted peppers, onions, tomatoes, cucumbers and roasted sunflower seeds in a zesty citrus-honey vinaigrette, the hearty Coraline’s Salad is a “must have” starter. Additional salad offerings include the BLT Wedge Salad, and Salt Roasted Beets with seasonal citrus, goat cheese, and candied Louisiana pecans in a charred green onion vinaigrette.
Signatures – Snapper Coraline is a standout among the main courses, as is Redfish Court-Bouillon, which is slow simmered with holy trinity, blue crab, shrimp, tomatoes, and white rice served with French bread. Gulf fresh seafood abounds with Yellowfin Tuna, Gulf Shrimp and Golden Shrimp, lightly crusted and fried served with tempura-style mixed vegetables and a side of creole ranch. Along with straight off-the-boat selections, fresh fish is flown in daily from the finest purveyors around the country and showcased as seasonal “catch of the day” specials. Coraline’s extensive menu also offers a variety of non-seafood options including Sticky Chicken Ballotine and succulent steaks such as Blackened NY Strip, Filet Mignon featuring a New Orleans brown bordelaise, whipped potatoes and roasted asparagus. The Prime Pork Porterhouse is braised Mississippi-style with caramelized onions and pickled pepperoncini peppers served with sweet potatoes and green beans.
Steamed Seafood – Moist and savory steamed options include the 2 Pound Maine Lobster, sweet deep water 1 Pound Royal Reds, and flown-in fresh 1.5 Pound Alaskan King Crab Legs and 2 Pound Alaskan Snow Crabs.
Extras – An assortment of hearty sides round out any main course dish with selections such as Fried Okra, Corn Casserole, Fresh Greens and Sweet Potato Souffle.
Desserts – Over-the-top desserts and dessert cocktails embrace indulgence with sweet selections such as the Crème Brulee Martini, Strawberry Shortcake Martini, Hummingbird Cheesecake Brulee, White Chocolate Bread Pudding and Banana Upside Down Cake made with Pecan Florentine, Bananas Foster sauce and Brown Sugar ice cream.
Beverage Program – Reimagined classic cocktails are featured, such as the Old Poetic, crafted with Milagro Reposado Tequila, house-made Limoncello, Orgeat Syrup, Fuego Bitters, grapefruit and mint; Magnolia Sour mixed with Cathead’s Old Soul Mississippi Bourbon, lime juice, simple syrup, egg white and vanilla; and the refreshing Garden to Glass made with Chopin Vodka, Elderflower, cucumber juice, lemon juice, simple syrup and lemon peel. Coraline’s wine list offers premium selections by the glass, with an emphasis on finesse forward wines that pair best with Cajun and Creole seafood dishes, like Sauvignon Blanc and Pinot Noir.
Design – With a design inspired by the New Orleans’ French Quarter, Coraline’s interior features more than a few grand moments. Upon arrival, and behind a beautiful façade of green marble, guests are welcomed through a classic French-inspired trellis covered alley adorned with New Orleans’ inspired art transporting them to an upscale, yet comfortable dining experience. The main dining room features a variety of seating styles while cozy booths along the perimeter are set against a series of grand, arched windows allowing guests to enjoy the water view.
Coraline’s spacious layout is inspired by nature with the presence of oak furniture and lush plants, beautiful vases and masterfully-crafted artwork. Intricate evergreen foliage and dramatic green marble patterns grace the space from floor to ceiling, including the bar backdrop and table stands, further accentuating the restaurant’s charm. Coraline’s rich green color palette, bold checkered marble mosaic flooring, mirrored back bar, oyster show kitchen, main dining room and private dining area transports guests to a sophisticated dining experience and create an epicurean adventure for all to enjoy.

FOOTLOOSE THE MUSICAL DANCES INTO BEAU RIVAGE JUNE 21-JULY 7
It’s time to cut loose and kick off your Sunday shoes with Footloose the Musical at Beau Rivage as one of the most explosive rock-n-roll movie musicals of all time bursts onto the stage June 21 – July 7.
The classic Oscar® & Tony-nominated® movie and Broadway hit show is fueled by the world-renowned title song, “Footloose,” as well as “Let’s Hear It For The Boy,” and “Holding Out For A Hero,” and will have audiences dancing and singing in their seats throughout the show.
Dean Pitchford, who wrote the original screenplay and lyrics to the music by Tom Snow, adapted from the film [for the stage] in collaboration with Walter Bobbie. The soundtrack reached No. 1 on the Billboard charts and has sold more than 15 million copies. Additional songs include those by pop greats, Eric Carmen, Sammy Hagar, Kenny Loggins and Jim Steinman. Produced by special arrangement with Concord Theatricals, Rand Productions delivers this 90-minute version, directed by Jeb K. Rand.
Footloose the Musical tells the story of Ren McCormack, a big city teen who finds himself out of place in a rural town where dancing has been outlawed. As he tries to carve out a place for himself, he ignites a revolution in the town as the younger generation rebels against the strict rules of the local preacher. Through world-renowned music and dynamic choreography, Footloose celebrates the spirit and optimism of a young mind desiring change.
Ren McCormack is played by Hank Santos, whose credits include a national tour with Cats, Pretty Woman, Spongebob Squarepants Musical and A Chorus Line as part of a tour in Japan. The cast of Footloose is no stranger to national tours with many performers appearing in productions such as Miss Saigon, Forever Plaid, My Fair Lady, Kinky Boots and more. Reverend Shaw Moore is portrayed by Robert Bigley, who recently played Duncan Hines in the current season of The Food that Built America on the History Channel.

SUMMER BRUNCH AND DINNER ITEMS INTRODUCED AT SALT & IVY
Known for its weekend Champagne Brunches, themed dinner nights and classic New Orleans cocktail menu, Salt & Ivy adds several new offerings for brunch and dinner to its summer menu.
Salt & Ivy’s Chef Jason McWhorter’s summer features include peach pancakes topped with Prosecco cinnamon butter, Smoked Salmon Flatbread with herb cream cheese, tomatoes, capers and onion, as well as Soft Shell Crab Benedict, on an English Muffin served over Tomatoes and Arugula and Asparagus on the side. Brunch is the pinnacle of a weekend at Beau Rivage where features fresh-squeezed mimosas, poinsettias and bellinis are offered by the glass or bottomless and paired with favorites like Shrimp & Grits with Colby Jack Longhorn Cheese and Bacon, Chicken and Waffles, Eggs Sardou and Avocado Toast from 6 a.m. – 2 p.m. Saturday and Sunday.
Dinner service begins at 4 p.m. Wednesday through Sunday, with entrees designed to please all palettes. New offerings include a Pan Roast or Stew with choice of Shrimp, Crawfish, Oyster or Combination served with a Rich Tomato Cream Sauce, Brandy, Fresh Sauteed Vegetable as the Pan Roast, or Light Mushroom Cream Sauce, Fresh Herbs and Artichokes as the Stew. A spin on a classic sandwich is presented as the Biloxi Prime Rib Cheesesteak, which joins the Classic Reuben, Club Sandwich, Buffalo Half Chicken, Asian Chicken Salad, Homemade Hummus and Chicken Wings as new additions to the menu.
Salt & Ivy’s popular Chicken & Waffles entrée, as well as “woke up late” items such as Eggs Any Style, Ham & Cheese Omelet, the Ivy with two Eggs, New York Strip Steak and Breakfast Potatoes, all return to the dinner menu this summer, joining favorites like Redfish Imperial with Lemon Butter Sauce, Yellowfin Tuna Steak and BBQ Shrimp and Grits.
On Tuesday nights, in addition to its regular menu, Salt & Ivy features the Fried Seafood Platter with Mississippi Farm-Raised Catfish, Shrimp, Oysters, Stuffed Crab, Hushpuppies and a Baked Potato, along with domestic beer specials. IVORY’S DUELING PIANO BAR RETURNS TO BEAU RIVAGE
Beau Rivage’s entertainment calendar keeps getting hotter with Ivory’s Dueling Piano Bar extending through the summer. The fun will take place each Friday night from 9 p.m.-1 a.m.
“Ivory’s has been a big hit this spring at Beau Rivage and we are pleased to extend through the summer ,” said Beau Rivage Director of Entertainment Ramon Ruiz. “Ivory’s is a great place to spend a Friday night with friends, enjoy a few drinks and listen to some of your favorite songs played by some of the nation’s best piano players. We are always looking at ways to enhance our nightlife offerings and bringing back free entertainment with dueling pianos was a natural choice.”
Ivory’s festive drink menu includes a selection of wines and specialty cocktails including the Sweet Caroline (Light Rum, Pineapple Juice, Rock Candy, Lime Juice, Club Soda), St. James Infirmary (Vodka, Passion Fruit, Maraschino Cherries), Freebird (Gold Tequila, Cointreau, Sour, Splash of Orange Juice) and the Bohemian Rhapsody, presented in a commemorative bowl serving two or more guests (Pineapple Juice, Orange Juice, Lemon Juice, Gin, Light Rum, Vodka, Cherries, Pineapple Chunks).

The Roasted Bean is known for its hot and cold coffee-based drinks, made from beans that are roasted and ground daily by the in-house master roaster to create supreme coffees, espressos and cappuccinos. The Beau Rivage Resort & Casino arcade is open seven days a week. The Arcade offers new games, prizes, and technology with reloadable arcade cards for a more convenient way of purchasing game tokens. POKER ROOM
Beau Rivage guests can enjoy a variety of games, tournaments, and promotions in our smoke-free Poker Room daily. The Poker Room is open to guests Monday-Sunday 10 a.m. – 4 a.m.
- Daily Tournaments have a $100 buy-in and begin at 12:15 p.m. Sunday – Thursday. Friday and Saturday tournaments have a $150 buy-in and begin at 12:15 p.m.

- Double-Up Drawings Hourly random table or seat drawing beginning at 11:15 a.m. Monday – Thursday. Active player in the random table or seat may take their initial prize or go for the Double-Up. The initial prize is $200 with the option to choose red or black for a chance at $400. If the player chooses to Double-Up, one card will be turned up at the completion of the hand.
